250 g / 2 cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons cocoa powder (optional)
120 g / ½ cup unsalted butter, softened
150 g / ¾ cup brown sugar
2 large eggs
120 ml / ½ cup strong brewed coffee, cooled
120 ml / ½ cup milk
1 teaspoon vanilla extract
100 g / ¾ cup sour cream or Greek yogurt
Glaze (optional): 60 g / ½ cup powdered sugar, 1 tablespoon brewed coffee
Preheat oven to 180°C / 350°F and grease a 9×5-inch loaf pan.
Whisk flour, baking powder, baking soda, salt, and cocoa together.
Cream butter and brown sugar until fluffy.
Add eggs one at a time, then vanilla.
Mix coffee, milk, and sour cream.
Alternate adding dry ingredients and coffee mixture to the batter.
Pour into pan and smooth top.
Bake 45–50 minutes until a toothpick comes out clean.
Cool, then drizzle glaze if desired.
