  • 1 ½ teaspoons baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 2 tablespoons cocoa powder (optional)

  • 120 g / ½ cup unsalted butter, softened

  • 150 g / ¾ cup brown sugar

  • 2 large eggs

  • 120 ml / ½ cup strong brewed coffee, cooled

  • 120 ml / ½ cup milk

  • 1 teaspoon vanilla extract

  • 100 g / ¾ cup sour cream or Greek yogurt

  • Glaze (optional): 60 g / ½ cup powdered sugar, 1 tablespoon brewed coffee

Instructions

  • Preheat oven to 180°C / 350°F and grease a 9×5-inch loaf pan.

  • Whisk flour, baking powder, baking soda, salt, and cocoa together.

  • Cream butter and brown sugar until fluffy.

  • Add eggs one at a time, then vanilla.

  • Mix coffee, milk, and sour cream.

  • Alternate adding dry ingredients and coffee mixture to the batter.

  • Pour into pan and smooth top.

  • Bake 45–50 minutes until a toothpick comes out clean.

  • Cool, then drizzle glaze if desired.

Notes

Do not overmix batter to ensure a tender crumb. Use strong coffee for best flavor. Optional glaze adds sweetness and visual appeal.
