500 g / 1 lb boneless, skinless chicken breast or thighs, cut into cubes
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
Wooden or metal skewers (soak wooden in water 30 minutes)
Optional: chopped parsley, lemon wedges
Mix olive oil, lemon juice, garlic, paprika, cumin, oregano, salt, and pepper for marinade.
Toss chicken in marinade; refrigerate 30 min–2 hrs.
Preheat grill, oven, or grill pan to medium-high.
Thread chicken onto skewers with small gaps between pieces.
Cook:
Grill 10–12 min, turning occasionally.
Oven: 200°C / 400°F, 15–18 min, turn halfway.
