Tender, flavorful chicken cubes marinated in herbs and spices, threaded onto skewers, and cooked to juicy perfection.

Ingredients

  • 500 g / 1 lb boneless, skinless chicken breast or thighs, cut into cubes

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 3 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon ground cumin

  • ½ teaspoon dried oregano

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Wooden or metal skewers (soak wooden in water 30 minutes)

  • Optional: chopped parsley, lemon wedges

Instructions

  • Mix olive oil, lemon juice, garlic, paprika, cumin, oregano, salt, and pepper for marinade.

  • Toss chicken in marinade; refrigerate 30 min–2 hrs.

  • Preheat grill, oven, or grill pan to medium-high.

  • Thread chicken onto skewers with small gaps between pieces.

  • Cook:

    • Grill 10–12 min, turning occasionally.

    • Oven: 200°C / 400°F, 15–18 min, turn halfway.

  • Let rest 2–3 min; garnish with parsley and serve with lemon.

Notes

Ensure chicken pieces are uniform for even cooking. Marinate for at least 30 minutes for maximum flavor. Broil briefly for extra color and char.
