A warm, cheesy sandwich with juicy chicken, creamy avocado, and perfectly melted cheese.
4 slices of bread (sourdough, whole wheat, or your choice)
2 cooked chicken breasts, sliced or shredded (300 g / 10 oz)
1 ripe avocado
100 g / 1 cup shredded cheddar or mozzarella cheese
2 tablespoons mayonnaise
1 teaspoon Dijon mustard (optional)
½ teaspoon salt
¼ teaspoon black pepper
1 small tomato, sliced (optional)
1 tablespoon butter or olive oil for grilling
Optional: fresh lettuce or baby spinach
Mash avocado with salt and pepper; mix with mayonnaise and Dijon mustard.
Spread avocado mixture on each slice of bread.
Layer chicken, cheese, tomato, and lettuce on two slices.
Top with remaining bread, avocado side down.
Heat skillet with butter/olive oil, grill sandwiches 3–4 min per side until golden and cheese melts.
Slice in half and serve immediately.
